This washed-rind cheese, made from milk produced in Ome City and Mizuho Town, is made using Genroku, a sake brewed using the kimoto method (a traditional and labor-intensive method of preparing yeast starter) by Ozawa Brewery in Ome City. It naturally goes with wine and also pairs exceptionally well with sake and Japanese ingredients.
