Tokyo Shamo is a brand chicken with high scarcity value, as a mere four poultry farmers in Tokyo produce it. Its flavor has captivated many celebrities and chefs. A dish called shamo-nabe has a flavor that symbolizes the Edo period (1603 – 1868) and is said to have been a favorite of Hasegawa Heizo, a well-known Shogunate officer in charge of investigating robberies and arsons in Edo (the old name of Tokyo) during the second half of the 18th century.
