This brewery was established in 1822. The Chichibu-Okutama underground water that welled up in a well dug on the grounds was moderately hard water perfect for sake brewing. Water from that well is still used today. The special honjozo (sake to which a small amount of distilled alcohol is added to help extract flavor and aroma from a mash made of rice that has been milled so that 60% or less of the original grain remains) Maboroshi no Sake is delicious both cold and warm.
This long established brewery was founded in 1822. As their family motto states, "Create with care and sell with care", the brewery continues to only create small batches of sake. The name of their most famous sake, Kasen, comes from the joy of obtaining the best water for sake brewing. The brewery also has a store room registered as a culture asset by the Japanese government.
