Edo Tamagawaya is fastidious about the techniques of yugone (hot water kneading) and jukusei kanso (maturation drying). These small touches, which have not changed since the old days, give boiled noodles a smooth texture and translucent luster. The noodles are made carefully so that many people will come to love them, once they discover that Tokyo has noodles that are this good.
To this day they still use the same painstaking manufacturing method as when the company was founded. The smooth texture and translucent luster of the noodles are what set these apart. They are available on the first floor of the plant. In addition to dried noodles fresh pasta, udon and steamed noodles are available.
