Edo Ama Miso (sweet Edo-style miso) has enjoyed popularity since the Edo period (1603 - 1868). Made with plenty of carefully selected rice-malt, the salt content is only about half that of usual salty miso, making its peculiar mellow sweetness prominent. The umami and fragrance of soybeans cooked with rice creates a rich flavor.
A large caldron used for making miso awaits you at the entrance. You can feel the long history of miso making here from the shop displays as well. They sell a variety of different miso including their unique sweet miso called Edo Sweet Miso and their original brand miso.
