Characteristics of bonito
Bonito is a migratory fish that is widely distributed in tropical to temperate regions of the world, and is characterized by a spindle-shaped body suitable for swimming at high speed, and several vertical stripes on its ventral side that are not noticeable when alive. In the waters of the Izu and Ogasawara Islands, the fish are caught by towline fishing, in which fishing boats drag artificial bait and catch each fish one by one. The season for catching bonito is from February to May, which is earlier than in other sea areas, so it is the so-called ``first-time bonito.'' In order to prevent the flesh from spoiling, the bonito is shipped in barrels filled with seawater and ice. "Hachijo Barrel Bonito" is highly rated in the market. It is eaten as sashimi or tataki.
